The Meyer lemon fruit is yellow and rounder than a true lemon. The skin is fragrant and thin, colored a deep yellow with a slight orange tint when ripe. Meyer lemon fruits have a sweeter, less acidic flavor than the more common Lisbon or Eureka supermarket lemon varieties. The pulp is dark yellow and contains up to 10 seeds per fruit. Meyer lemons are a cross between a regular lemon (Eureka and Lisbon varieties) and mandarin orange.

* Harvesting: Lemons are ready to pick as soon as they are yellow or yellow-green in appearance and firm. The fruit will be 2 to 3 inches in size. It’s better to wait until they are the right size and not worry so much about color than to wait for them to be completely yellow.
